200g unsalted butter
200g dark chocolate
150g light brown sugar
150g granulated sugar
100g milk chocolate
95g plain flour
45g cocoa powder
3 medium eggs
1 tsp vanilla extract
A pinch of salt
Preheat your oven to 170 degrees fan and line a 9x9” square dish with baking paper.
In 30 second intervals melt together the butter and dark chocolate in the microwave. Stir between each interval and once fully melted set aside to cool.
In a bowl whisk together the two sugars and eggs until pale and a bit fluffy.
Gently fold in the butter/chocolate mixture until combined.
Add in the flour, cocoa powder and salt and fold in until just combined.
Add in the milk chocolate and Rolos and fold until well distributed throughout.
Pour into the square dish and bake in the centre of the oven for 40-45 minutes.
Once baked, leave aside to cool before cutting into squares.
If you wish, add a few Rolos on top and drizzle some chocolate or caramel.
