Werther’s Original sticky toffee cookies!

Updated: Jun 25, 2020

Ok can we just appreciate the picture of these cookies for a second? 😍 Honestly these were so so good! My favourite cookies are toffee cookies so making this was a dream for me. If you fancy giving them a go this recipe is super easy and the results are to die for!

Ingredients -

130g unsalted butter

110g light brown sugar

70g granulated sugar

300g plain flour

1/2 tsp bicarbonate of soda

1 1/2 tsp baking powder

1 medium egg

1 tsp vanilla extract

150g chewy wethers original toffees

100g butterscotch pieces

Directions -

  1. Cream together the butter and both sugars until smooth and well combined.

  2. Add in the egg and vanilla extract.

  3. In a separate bowl whisk together the flour, bicarbonate of soda, baking powder and salt.

  4. Gradually add the dry ingredients into the wet, stirring as you pour.

  5. Add in the toffee and butterscotch pieces. Mix until evenly distributed. If you like leave some aside to decorate the top of the cookies later.

  6. Evenly divide the cookie dough and roll it into smooth balls by hand. I weighed mine out to about 118g each.

  7. Place the cookie dough balls in the freezer to chill for approximately 30 minutes. This part is extremely important for these cookies. Doing this helps them hold their shape and stops them spreading too much during the cooking process. If you don’t do this your cookies will fall apart.

  8. In the meantime, preheat your oven to 170 degrees fan.

  9. After 30 minutes, take the cookie dough out of the freezer and place on a large tray. I typically do 5 per tray.

  10. Make sure your tray is line with baking paper, not foil. As these contain toffwe they can get quite sticky during the cooking process and foil will just stick to the cookies!

  11. Gently push down the balls of cookie dough to ensure they spread a reasonable amount when baking.

  12. Use the left over toffee/butterscotch to decorate the top of the cookies and then put them in the oven.

  13. Bake the cookies for approximately 12-14 minutes, depending on how soft you like your cookies.

  14. Once cooked, take the cookies out of the oven and allow them to cool down on the side. They will continue to cook as they cool.

  15. Enjoy!
