Terry’s mini egg cookie nests!

Ingredients - 8 cookie cups
260g plain flour
115g unsalted butter
100g granulated sugar
60 light brown sugar
20g cocoa powder
1 large egg
1 tsp vanilla
1/2 tsp bicarbonate of soda
A pinch of salt
150g milk chocolate, melted
100g milk chocolate, chopped

Instructions -
Preheat your over to 160 degrees fan and line your muffin tray with 8 cases.
In a bowl beat together the butter and sugar until light and fluffy.
Mix in the egg and vanilla until well combined.
Add in the flour, cocoa powder, bicarbonate of soda and salt. Mix until a dough forms.
Press the dough down into the muffin cases to create the cookie cup.
Bake in the oven for 10-12 minutes. Once baked, using the back of a spoon or ice cream scoop press down the middle of the cookie cup to make a dent.
Melt the milk chocolate in the microwave and pour into the middle of the cups until it almost reaches the top.
Sprinkle the chopped chocolate on top to create a nest and then place your eggs on top.
Leave to set in the fridge for an hour or so before serving.
