Ingredients - 6 muffins
110g plain flour
35g granulated sugar
35g light brown sugar
35g cocoa powder
1/2 tsp bicarbonate of soda
1 medium egg
1/2 tsp vanilla extract
35ml vegetable oil
A pinch of salt
200g Terry’s chocolate orange, chopped
Preheat your oven to 180 degrees fan and line a muffin tray with 6 cases.
In a bowl whisk together the flour, sugars, bicarbonate of soda, cocoa powder and salt.
In a separate bowl whisk together the egg, oil, buttermilk and vanilla extract.
Pour the wet ingredients into the dry and mix until just combined.
Fold in the chopped chocolate orange pieces until well distributed throughout.
Pour the muffin batter equally between the muffin cases. Fill them about 3/4 of the way from the top.
Bake in the oven for 18-22 minutes or until a knife comes out clean when inserted.
Once baked, leave aside to cool completely.
If you like, place a slice of chocolate orange on top.
