S’mores cookie cups!

Ingredients - 12 cookie cups

125g unsalted butter or baking spread

150g golden caster sugar

300g plain flour

1 large egg

1 tsp bicarbonate of soda

1 tsp of vanilla extract

200g coarsely chopped milk chocolate

12 tsp marshmallow fluff


Instructions -

  1. Preheat your oven to 160 degrees fan and grease a muffin tray.

  2. In a bowl, beat together the butter and sugar until light and fluffy.

  3. Add in the egg and vanilla, mix to combine.

  4. Add in the flour and bicarbonate of soda. Mix until a dough forms.

  5. Add in 150g of milk chocolate and mix to distribute evenly throughout the dough.

  6. Using an ice cream scoop, get a ball of cookie dough and either flatten with your hand or a rolling pin.

  7. Once flat, mould the dough into the muffin tray evenly, leaving a hole in the middle.

  8. Continue until you have 12 slots filled with cookie dough.

  9. Place in the centre of the oven for 12-14 minutes or until golden brown.

  10. Once baked, leave aside to cool for at least 10 minutes.

  11. Cut a hole in the middle of the cookie cups and put a tsp of marshmallow fluff in each.

  12. Melt 50g of milk chocolate in the microwave and pour on top of the marshmallow fluff.

  13. Allow to set and then serve.

  14. Enjoy!
