Red Velvet skillet cookie!

Ingredients -

275g plain flour

130g unsalted butter

80g light brown sugar

80g golden caster sugar

25g cocoa powder

1 medium egg

1 tsp vanilla extract

1 tsp baking powder

1/2 tsp bicarbonate of soda

1/2 tsp red food colouring paste ( I use this paste - https://amzn.to/2EPYCON)

250g white chocolate


Directions -

  1. Preheat your oven to 150 degrees fan and grease an 8” cake pan or 23cm skillet.

  2. In a bowl beat together the butter and sugars until light and fluffy.

  3. Add in the egg, vanilla extract and red food colouring. Mix to combine.

  4. Add in the flour, cocoa powder, bicarbonate of soda and baking powder. Fold in until it forms a dough.

  5. Add in the 250g of chopped white chocolate and fold until well distributed.

  6. Put the cookie dough in your cake tin or skillet and press down so it is even.

  7. Bake in the middle of your oven for 20-25 minutes. I took mine out at 20 minutes but it depends on your oven.

  8. Once cooked, leave on the side to cool down a bit before serving.

  9. Enjoy!
