Red velvet lava cake!

Ingredients - Serves 2

25g white chocolate

25g milk chocolate

60g unsalted butter

30g plain flour

30g granulated sugar

10g cocoa powder

1 large egg

1/2 tsp vanilla extract

1/2 tsp red food colouring (I use this one - https://amzn.to/2EPYCON)

A pinch of salt


Instructions -

  1. Preheat your oven to 180 degrees fan and grease and flour two ramekin dishes.

  2. In the microwave melt together your chocolate and butter. I do it in 20 second intervals.

  3. In a bowl whisk together your egg, sugar and vanilla essence until slightly pale.

  4. Pour the chocolate mixture into the bowl and mix to combine.

  5. Add in the flour, cocoa powder and salt. Mix to combine.

  6. Add the red food colouring and mix to distribute the colour evenly.

  7. Pour the cake batter evenly into the two ramekins.

  8. Bake the cakes in the oven for 14-16 minutes. The outside should be cooked and the middle slightly undercooked.

  9. Once cooked take out of the oven and leave to cool for a few minutes.

  10. Serve immediately and enjoy!
