Oreo stuffed cookies!

Ingredients - 8 cookies
130g unsalted butter
100g light brown sugar
50g golden caster sugar
300g plain flour
1 medium egg
1 tsp vanilla extract
1 tsp baking powder
1/2 tsp bicarbonate of soda
200g milk chocolate
A pinch of salt
In a bowl beat together the butter and sugars until light and fluffy.
Add in the egg and vanilla extract. Mix to combine.
Pour in the flour, salt, baking powder and bicarbonate of soda. Mix to combine.
Fold in the milk chocolate until well distributed throughout.
Weigh out the cookie dough into 100g individual balls.
Place the balls on a piece of parchment paper and chill in the freezer for 15 minutes.
In the meantime preheat your oven to 170 degrees fan.
Once chilled take out the cookie dough.
Split the balls in half and cover the Oreo with half of the dough. Use the other half of the dough to cover the bottom of the Oreo. Make sure the Oreo is completely covered by the cookie dough.
Once satisfied that the Oreo is covered, place the cookie dough balls on a baking tray and bake in the oven for 12-14 minutes or until golden brown.
Once baked, take out of the oven and allow to cool before serving.
