Oreo brownies!

250g light brown sugar

100g dark chocolate

150g unsalted butter

80g cocoa powder

80g plain flour

4 medium eggs

1 tsp vanilla extract

A pinch of salt

100g milk chocolate, chopped

16 Oreos, chopped

Instructions -

  1. Preheat your oven to 170 degrees fan and line a 9x9“ square dish with baking paper.

  2. In the microwave melt together the butter and dark chocolate. Leave aside to cool.

  3. In a separate bowl whisk together the eggs and sugar until pale and doubled in size. This takes about 3 minutes (best to use an electric whisk!)

  4. Add the cooled butter mixture to the bowl and whisk until combined.

  5. Add the cocoa powder, salt and vanilla extract to the mixture. Mix until combined.

  6. Fold in the flour until just combined and then fold in the Oreo and milk chocolate pieces until evenly distributed throughout.

  7. Pour the brownie batter into the square dish and spread out using the back of your spoon.

  8. Bake in the oven for 30-35 minutes or until a knife comes out with a fudgy crumb when inserted.

  9. Once baked take the brownies out of the oven. Push some extra Oreo pieces into the top of the brownies and then leave to cool completely.

  10. Once cooled, cut the brownies into squares and serve. Enjoy!
