Nutella stuffed chocolate muffins!
Ingredients -12 muffins
400g self raising flour
250g light brown sugar
150ml vegetable oil
250ml whole milk
1 large egg
1 tsp vanilla extract
A pinch of salt
12 tsp of Nutella
200g Milk chocolate, chopped
Preheat your oven to 180 degrees fan and line a muffin tray with 12 cases.
In a bowl whisk together the egg, vegetable oil, milk and vanilla extract for 1 minute.
Whisk in the brown sugar.
Sift in the flour and salt. Fold in until just combined. Don’t over mix otherwise the muffins will be tough.
Fold in the chopped chocolate so it’s evenly distributed.
Pour a tbsp of muffin batter into the muffin cases.
Using a tsp, put a dallop of Nutella on top of the muffin batter.
Cover the Nutella with a tsp of muffin batter. You want your cases to be 3/4 full.
Bake in the oven for 20-25 minutes or until golden brown.
Once baked put aside to cool.
