Mini Terry’s chocolate orange cheesecake!

75g full fat cream cheese
50ml double cream
50g Terry’s chocolate orange, melted
30g unsalted butter, melted
75g crushed biscuits
1 tbsp icing sugar
1/2 tsp vanilla extract
Blitz your biscuits in the microwave until they form a fine crumb. Add in your melted butter and mix until it forms a wet sand consistency.
Pour the biscuit mixture into your two ramekins and smooth out with the back of a spoon. Leave to firm up in the fridge for half an hour.
In a bowl whisk together the cream cheese, double cream, icing sugar and vanilla until firm peaks form.
Fold in the melted chocolate until well combined.
Pour the batter into the two ramekins and level with a spoon. Put in the fridge to set for 1-2 hours.
Once set, decorate with a Terry’s chocolate orange segment and drizzle some chocolate on top.
