Lindt salted caramel loaf cake!

Ingredients -

(Cake batter)

200g unsalted butter

200g golden caster sugar

100g Biscoff spread or caramel

150g self raising flour

50g cocoa powder

3 medium eggs

3 tbsp buttermilk

1 tsp vanilla extract

A pinch of salt


(Salted caramel buttercream)

200g unsalted butter

400g icing sugar

150g caramel

A pinch of salt


Decoration:

Lindt Salted Caramel chocolate


Instructions -

  1. Preheat your oven to 150 degrees fan and line a loaf dish.

  2. In a bowl mix together the butter and sugar until light and fluffy.

  3. Add in the eggs, vanilla and buttermilk. Mix to combine.

  4. Add in the flour, cocoa powder and salt. Mix to combine.

  5. Melt 100g of Biscoff spread in the microwave and pour into the cake batter. Mix to combine.

  6. Pour the batter into the loaf dish and bake in the oven for 50-55 minutes.

  7. Once baked leave the cake to cool completely. Move onto making the buttercream.

  8. In a bowl mix together the butter and icing sugar until light and fluffy.

  9. Add in the caramel and salt. If the buttercream is the wrong consistency then you can correct this using more icing sugar to thicken or milk to loosen.

  10. Either pipe or spread the buttercream onto the cooled cake.

  11. If you like, decorate with Lindt salted caramel chocolates.

  12. Enjoy!
