400g white chocolate
150g lemon curd
20g sherbet powder
1 tsp yellow food colouring (optional)
In the microwave melt together the white chocolate and lemon curd.
Once melted, mix to combine.
Pour the mixture into a lined 8x8 inch square dish.
Sprinkle the sherbet on top of the fudge.
Allow to set in the fridge for 2+ hours.
