Jammie Dodger fudge!

Ingredients -

25g unsalted butter

397g condensed milk

400g white chocolate, chopped

1/2 tsp vanilla extract

7 Jammie Dodgers, chopped

3 tbsp raspberry jam


Instructions -

  1. Line a 9x9” square dish with baking paper and set aside for later.

  2. In a saucepan over a low medium heat, melt together the butter and condensed milk until smooth.

  3. Turn the heat up to medium high and allow the milk to simmer for a couple of minutes.

  4. Take off the heat and add in the chopped white chocolate. Mix until melted and the mixture starts to thicken.

  5. Fold in the Jammie Dodger pieces and the vanilla.

  6. Add in 3/4 of the jam and fold to create a swirled effect.

  7. Pour the fudge into the square dish and even out using the back of a spoon.

  8. Dollop the remaining jam on top of the fudge and if you like add a few Jammy Dodgers on top.

  9. Allow to set in the fridge for 2-3 hours. Once set cut into bite sized squares.

  10. Serve and enjoy!
