Galaxy cookie crumble muffins!
Ingredients - 6 muffins
60g milk chocolate
60g unsalted butter or baking spread
75g caster sugar
1 medium egg
1/2 tsp vanilla extract
40ml buttermilk
50g plain flour
20g cocoa powder
1/2 teaspoon baking soda
A pinch of salt
100g galaxy cookie crumble
6 Maryland cookies
Instructions -
Preheat your oven to 200 degrees fan. Line your muffin pan with 6 muffins cases.
Place your chocolate and butter in a heat-proof bowl and microwave in 30 second intervals until melted.
Add the egg, sugar, vanilla and buttermilk. Whisk to combine.
Add the flour, baking soda, salt and cocoa powder. The batter should be thick.
Fold in the galaxy cookie crumble until well distributed throughout.
Pour the batter into each muffin case until 3/4 full. Bake the muffins for 5 minutes at 200 degrees then reduce the heat to 180 degrees.
Bake for an extra 18-20 minutes or until a knife inserted in the center comes out clean.
Once bakes, all the muffins to cool for 5 minutes in the muffin tray, then transfer to your counter or a wire rack to cool completely.
Insert a Maryland cookie into the top of the muffin and sprinkle some crumbs on top.
