Double chocolate cookie bars!

Ingredients -

115g unsalted butter/baking spread, melted

80g light brown sugar.

80g granulated sugar.

275 plain flour.

20g cocoa powder

1 tsp cornflour.

A pinch of salt.

1 medium egg.

1 tsp of vanilla extract.

1/2 tsp bicarbonate of soda.

150g white chocolate, chopped.

150g milk chocolate, chopped.

Directions -

  1. Preheat your oven to 170 degrees fan and line an 8” square dish.

  2. Melt the butter in the microwave and leave to cool for a few seconds.

  3. Add to a bowl along with the egg, vanilla extract and both sugars. Mix until smooth.

  4. In a separate bowl whisk together the flour, cocoa powder, cornflour and salt.

  5. Gradually add the dry ingredients into the wet, stirring as you pour.

  6. Add in the milk and white chocolate pieces. Mix until evenly distributed.

  7. Put the cookie dough in the lined 8” pan and push down so it‘s even. Place the remaining smarties on top, pushing them in slightly.

  8. Bake the cookie in the oven for approximately 20-25 minutes, depending on how soft you like your cookies

  9. Once cooked, take the cookie out of the oven and allow to cool down on the side. It will continue to cook as it cools.

  10. Once set, cut the cookie into squares. Serve and enjoy!

Note -

These should keep for 3/4 days in an airtight container.
