Jessica’s Delicacies
Cinnamon roll inspired muffins!
Ingredients - 12 muffins.
(Muffin batter):
1 large egg.
1 tsp vanilla extract.
2 tsp mixed spice.
100g golden caster sugar.
35ml vegetable oil.
200g plain flour.
2 tsp baking powder.
pinch of salt.
100ml buttermilk.
(Cinnamon sugar mix):
1 1/2 tsp cinnamon.
3 tbsp unsalted butter.
65g dark brown sugar.
(Cream cheese glaze):
60g icing sugar.
1 tbsp full fat cream cheese.
1/2 tbsp unsalted butter.
1/2 tsp vanilla extract.
Directions -
In a bowl whisk together the egg, sugar, vanilla essence, vegetable oil and buttermilk until combined.
Fold in the flour, baking powder, salt and mixed spice until combined.
Fill your muffin cases half way with the batter.
Move on to making the cinnamon sugar mix.
Melt the 3 tbsp of butter in the microwave and then mix in the cinnamon and sugar. It should form a thick paste like fluid.
Place half a teaspoon of the sugar mix in each muffin case and swirl into the batter.
Place the remaining muffin batter in the muffin cases. They should be approximately 2/3 full.
Using a skewer and the cinnamon sugar, draw a swirl on top of the muffins.
Place the muffins in a preheated oven (170 degrees) and bake for 18-20 minutes.
Once done take them out of the oven and allow to cool.
(Cream cheese frosting):
Sift the icing sugar into a bowl and add the cream cheese, vanilla essence and butter.
Mix until combined. If the consistency is too thick you can add milk to loosen it.
Drizzle on top of the muffins.
