Cheesy muffins!
Ingredients - 8 muffins
150g plain flour
42ml vegetable oil
80ml whole or semi skimmed milk
100g grated cheese
30g butter
1 medium egg
1 chopped garlic clove
1 tsp baking powder
1/4 tsp bicarbonate of soda
1/2 tsp salt
1/2 tsp garlic pepper or freshly ground black pepper
Directions -
Preheat your oven to 160 degrees fan and line a muffin tray with 8 cases.
Put the butter and chopped garlic in a bowl. Melt in the microwave in 30 second intervals.
In a separate bowl whisk together the flour, baking powder, bicarbonate of soda and salt.
Whisk together the egg, milk, butter and oil until combined.
Pour the wet ingredients into the dry and mix until just combined. Do not over mix otherwise your muffins will be tough.
Gently mix in the cheese until well distributed.
Pour the muffin batter into your muffin cases. Make sure they’re 3/4 full.
Place the muffins in the oven for 20-25 minutes or until golden brown. I cooked mine for 22 minutes.
Once cooked take out of the oven and allow to cool.
Serve with a dip of your choice and enjoy!
