Cadbury caramel cupcakes!

Ingredients -

180ml vegetable oil

180g plain flour

180g golden caster sugar

50ml buttermilk or whole milk

2 medium eggs

1 1/2 tsp baking powder

1 tsp vanilla extract

A pinch of salt


Buttercream -

200g unsalted butter, softened

400g icing sugar

2 tsp caramel sauce (I use this one: https://amzn.to/3qIUfY6 )

Instructions -

  1. Preheat your oven to 160 degrees fan and line a muffin tray with 12 cases.

  2. In a bowl mix together the oil, egg, vanilla and buttermilk.

  3. Add in the flour, sugar, baking powder and salt. Mix until combined.

  4. Pour the cake batter equally between the 12 cases and then bake in the oven for 20-22 minutes.

  5. Once baked leave aside to cool and move on to making the buttercream.

  6. Beat together the butter and icing sugar until smooth and supple. Add in the caramel sauce and mix until combined.

  7. Either pipe or spread the buttercream onto your cupcakes and then drizzle with caramel sauce. If you wish add a Cadbury caramel button on top.

  8. Serve and enjoy!
