Buttermilk Biscoff Pancakes!



Ingredients -

130g self raising flour

32g golden caster sugar

96ml buttermilk

22g unsalted butter

1 medium egg

1 tsp Biscoff Spread

1/2 tsp vanilla extract

1/2 tsp baking soda

A pinch of salt


Directions -

  1. In a bowl whisk together the dry ingredients.

  2. Melt the unsalted butter in the microwave. Add in the buttermilk, vanilla extract and egg. Whisk to combine.

  3. Make a well in the middle of the dry ingredients and pour in the wet ingredients. Fold the ingredients together.

  4. Add in the Biscoff Spread and mix to distribute.

  5. Leave the pancake batter for about 10 minutes. This will help them to be light and fluffy rather than dense.

  6. Whilst you wait, put a frying pan over a medium heat and melt 1/2 a tsp of butter in it.

  7. After 10 minutes, put a tablespoon size of pancake batter in the frying pan.

  8. Leave it to cook until bubbles start to break on the surface of the pancake.

  9. Flip over and allow to cook on the other side. This should take approximately 3-4 minutes.

  10. Once cooked, put on a plate and decorate with whatever you like.

  11. Enjoy!
