130g plain flour
90g light brown sugar
65g granulated sugar
65g unsalted butter
32g cocoa powder
1/2 tsp baking powder
1/2 tsp vanilla extract
1 tsp coffee
A pinch of salt
2 large eggs
35g milk chocolate
35g dark chocolate
Preheat your oven to 170 degrees fan and line a tray with greaseproof paper.
In a bowl whisk together the flour, baking powder, cocoa powder and salt.
In the microwave melt together the butter and chocolate in 30 second intervals.
In a separate bowl whisk together the egg, sugar and vanilla extract for about 3 minutes. This is what gives brownies their cracked flaky texture.
Pour the chocolate and butter mix into the egg and sugar mix and stir to combine.
Add the coffee to the mixture.
Pour into the bowl containing the dry ingredients and fold with a spatula until just combined.
Place 1 1/2 tbsp sized circles of batter on the parchment paper. Leave some space between them as they will spread.
Bake in the oven for 10-12 minutes.
Once cooked allow to cool on the side.
