Biscoff & white chocolate blondies!

Ingredients -

300g plain flour

200g unsalted butter

100g golden caster sugar

100g light brown sugar

2 large eggs

1 tsp cornflour

1 tsp vanilla extract

A pinch of salt

100g white chocolate

100g biscoff biscuits, chopped

200g biscoff spread


Instructions -

  1. Preheat your oven to 160 degrees fan/180 degrees conventional and line a 9x9” square dish.

  2. Melt your butter in the microwave and set aside to cool for a couple minutes.

  3. Once cool, add both sugars and mix until combined.

  4. Add in both eggs and the vanilla extract. Mix to combine.

  5. Add the flour, cornflour and salt to the mixture. Stir until just combined.

  6. Add the white chocolate and chopped biscuits to the mixture, stirring to evenly distribute.

  7. Pour the batter into the square dish and use a spoon to even it out.

  8. Place blobs of biscoff spread around the top of the batter and swirl in using a knife. Place a few biscuits on top (I used 9 in a diagonal pattern).

  9. Bake in the oven for 25-30 minutes or until the centre has a slight wobble. Mine took 28 minutes but check yours from 20 minutes onwards.

  10. Once baked, set aside to cool down or place in the fridge for a couple hours to help it set.

  11. Once set, cut into squares and serve. Enjoy!
