Biscoff & Kinder cheesecake cookie bars!



Ingredients - (Cookie):

  • 300g plain flour

  • 1/2 tsp vanilla extract

  • A pinch of salt

  • 2 tsp cornflour

  • 120g unsalted butter/baking spread

  • 40g granulated sugar

  • 130g light brown sugar

  • 1 large egg

  • 1/2 tsp bicarbonate of soda

  • 1 tbsp Biscoff spread

  • 200g Kinder chocolate

(Cheesecake):

  • 250g full fat cream cheese

  • 80g granulated Sugar

  • 1 large egg

  • 1/2 tsp vanilla extract

Instructions -

1. Preheat your oven to 170 degrees fan and line a 9x9“ square dish with baking paper.


2. Melt the butter in the microwave using 30 second intervals. Add in the two sugars and whisk until dissolved.

3. Add in the egg, vanilla and Biscoff spread.


4. Add in the flour, bicarbonate of soda, cornflour and salt. Mix until a firm dough forms.


5. Fold in the kinder chocolate until well distributed throughout.


6. Pit the mixture into the bottom of the square tin and press down so that it’s even. Leave aside a small bowlful of dough for later.


7. In a bowl, beat the cream cheese until smooth. Add the sugar and beat until combined. Mix in the egg and vanilla until combined.


8. Pour the cheesecake batter on top of the cookie dough. Sprinkle the remaining cookie dough over the cheesecake. Bake in the oven for 25-30 minutes.


9. Once baked, turn the oven off and allow to cool with the door cracked slightly for 5-10 mins. Take out and leave to cool in the tin completely. Once cooled, refrigerate for a couple hours to set the cheesecake.


10. Once set, drizzle some Biscoff spread on top and crush a few biscoff biscuits. Cut into squares and enjoy!
