Jessica’s Delicacies
Apple and mixed berry spiced crumble!
Ingredients -
300g green apples
300g mixed berries
160g cold unsalted butter, cubed
150g plain flour
50g rolled oats (optional)
4 tbsp golden caster sugar
(Optional):
1 tbsp mixed spice
1 tsp cinnamon
1/2 tsp ginger
1/2 tsp nutmeg
1 tsp cornflour
Splash of lime juice
Directions -
Preheat your oven to 170 degrees fan.
In a saucepan over a medium heat, begin to boil down 300g green apples and 300g mixed berries.
Add a splash of lime juice to the fruit and mix in 2 tbsp of golden caster sugar.
After 5 minutes, add a tsp of cornflour to thicken the sauce.
Add the cinnamon, ginger and nutmeg to the fruit. Mix to evenly distribute.
Bring the fruit to a simmer, stirring occasionally so that it doesn’t get burnt.
Once you’re satisfied with the fruit‘s consistency, take it off the heat and pour it into a lined 9x9 inch square dish.
Spread it out evenly. Move onto making the crumble.
Crumble -
In a separate bowl, add the cold butter and flour. Rub together with your fingers until it forms a fine crumb.
Add 2 tbsp of caster sugar and mix to evenly distribute throughout.
Add the mixed spice and oats, again mixing to evenly distribute.
Pour the crumble on top of the fruit and spread out. Try to cover all of the fruit with the crumble.
Bake in the middle of your oven for 40 minutes or until the crumble turns a golden brown.
Once baked leave it to cool down for at least 10 minutes before serving.
